Quarantine Recipes We've Made + Loved


I am still not sure what day it is, but I am sure that this quarantine time has led us to make some delicious dinners! We have been cooking about every few days, and make enough to have leftovers for a couple of days after. This cuts down some stress about cooking in this already stressful time. The dinners we crave are warm, healthy-ish, comfort foods. And that's exactly what we have gone for! I am sharing the recipes we have made so far. We have loved them all! [we've also made all of these in the instant pot, and this is the one we have.]

Breakfast recipe of my own creation: sautéed mushrooms and spinach + scrambled egg whites topped with avocado+everything but the bagel seasoning and salsa!

I have also been more lenient about dessert every night, lol, and really want to give a shout out to my favorite/the BEST gluten free cookie dough: Sweet Loren's. I have tried many a pre-made GF cookie dough, and these are the winners!!!


I love this one! I have made it pre-quarantine as well.



I love anything I can put salsa and sour cream on 😂.

 Creamy Broccoli and Leek Soup
From this cookbook. This is a maybe healthier take on broccoli cheese soup. But it does have cheese, still, aha!
*to make gluten free, we skipped the flour and made a slurry out of corn starch.*


Fried Rice
From this cookbook. If you want take out, but can't get it, then this is the perfect recipe! We added some extra veggies, and I topped mine with a fried egg and sriracha. Yum-o!

  Happy Monday, friends! It is December, and that means you can catch me wearing plaid about every day. I wore this dress the other week, and have showed it on my Instagram, but it is still on sale, so I thought this outfit needed its own post! What I Packed for Rhode Island

  I am SO excited to be back on the East Coast for a bit. Today, we are driving to Rhode Island to spend the long weekend and celebrate my cousin's 30th birthday (thirty, flirting and thriving, right?!). I have only been to Rhode Island on one other occasion, and that was a marching band trip where we marched in the oldest Fourth of July celebration in the country. Thinking back on that, it was a very surreal experience that I am grateful for, and I am even more excited to get to go back to that state and explore as an adult. As soon as I knew we would be going to Rhode Island, I thought about the outfits for the trip.
