Festive Treats

Plaid shirt |   Leggings | Boots | Headband Over the weekend, we had our first cookie making venture of the season! One of my favorite types of Christmas cookies is spritz cookies- it is the one you use with the cookie press to make really cute shapes. I searched Pinterest for a gluten free spritz recipe, and found this super simple one from Thriving Gluten Free . I always try to find the gluten free recipes that do not have all sorts of crazy additive ingredients because it can be hard to find those, and they can be spendy. This one is literally just gf flour, sugar, butter and egg! And my goodness are they delicious, and smelled amazing while they baked. We baked some cookies, listened to holiday tunes, and out of nowhere, it started to snow!! It felt like the perfect cozy vibe for what turned into a snowy afternoon.   Here's the recipe from Thriving Gluten Free:   my one note is that I used the 1-to-1 gluten free flour blend from Bob's Red Mill! Quarantine Recipes We've Made + Loved

I am still not sure what day it is, but I am sure that this quarantine time has led us to make some delicious dinners! We have been cooking about every few days, and make enough to have leftovers for a couple of days after. This cuts down some stress about cooking in this already stressful time. The dinners we crave are warm, healthy-ish, comfort foods. And that's exactly what we have gone for! I am sharing the recipes we have made so far. We have loved them all! [we've also made all of these in the instant pot, and this is the one we have.] Breakfast recipe of my own creation: sautéed mushrooms and spinach + scrambled egg whites topped with avocado+everything but the bagel seasoning and salsa! I have also been more lenient about dessert every night, lol, and really want to give a shout out to my favorite/the BEST gluten free cookie dough: Sweet Loren's. I have tried many a pre-made GF cookie dough, and these are the winners!!! Detox Moroccan Lentil Soup I ...

My Go-to Green Smoothie

I honestly love a green smoothie. I really like any smoothie, but there is something about a green smoothie that makes me feel extra nourished. I have been making smoothies since college, and have gone through a lot of trial and error to what I like in them. I try to keep it simple, and not add any extra sweeteners, or things like that because I have found that it makes your smoothie taste artificially sweet. The fruit you add will sweeten up nicely! I also have a disclaimer in that I have never really measured anything as I make my smoothies. Eyeballing works well because it is all about what you like, and how you like it to taste! I included two nut butters because I just picked up the peanut butter with flax and chia seeds from TJ's, and its so yummy, and I had to share!  Green smoothie ingredients: - GREENS! --I use what ever I have= kale, spinach, frozen, etc. I like a lot, so its super green! - Frozen pineapple - Frozen grated ginger - I get this at Trader Joe's! ...
